White Wheat Mint Chip Chocolate Cookies

Trying new recipes is something I just love. My little family and I were getting prepped to traved to a weekend “reunion” of sorts with a few of my siblings and their families and we were assigned to supply treats for one of the meals. I happened upon this recipe on Pinterest (I heart Pinterest) and my family loves mint. They turned out to be way better than I had even thought. My brother-in-law said they were “The best thing we had eaten the whole reunion.” I have made them several times since then, and they are always a hit!
And don’t be thrown off by the white wheat flour – the cocoa powder covers up any mild wheat flour if you’re worried about that. No one will even know you added the healthier option!
Makes 24 cookies
1 ½ C White Wheat Flour
⅓ C Cocoa
½ Tsp Baking Soda
½ C Butter, softened
⅓ C Sugar
⅓ C Brown Sugar, packed
½ tsp Vanilla
1 tsp peppermint extract
1 1/2 cups green mint chips*
1. Preheat the oven to 350F
2. Beat the butter, sugar, brown sugar and vanilla until creamy.
3. Add eggs, cocoa, baking soda and flour and mix well.
4. Stir in the chocolate & mint chips.
5. Using 2 Tbsp of dough, form a ball and drop onto a cookie sheet.
6. Bake for 7-10 minutes.
