1 T butter
1 cup sliced mushrooms
1/4 cup white wine(optional)
1 cup brown rice
1 can cream of mushroom soup
1 can chicken stock
1 cup water
salt and pepper
1. Sautee mushrooms in butter for a minute or two. If using wine, add it and let it simmer for 5-7 minutes for the alcohol to evaporate (the mushrooms will still capture the flavor).
2. Add the brown rice and allow stir it with the mushrooms for 2-3 minutes.
3. Add the rest of the ingredients and stir well. All to simmer for 30 minutes – stirring occasionally.
Notes – add more water if needed. Also, we like a lot of pepper with this recipe. It compliments the mushrooms nicely.
