The Best Sweet Potato Casserole

Sweet Potato Casserole
Serves 6

3 large sweet potatoes 
1 cup sugar
2 eggs
1/2 cup butter, softened
1 tsp vanilla extract

Crunch Topping (I double this to increase the deliciousness! But whatever.)
1/3 cup melted butter
1/3 cup flour
1 cup brown sugar
1 cup chopped pecans
1 tbsp cinnamon

1. Boil potatoes until tender.
2. Take skin off when cooled and able to handle
3. Put in large bowl and whip them till fluffy adding all other ingredients (I also put it all in the kitchenaide – too much work to mix it by hand!)
4. Pour into buttered casserole and top with the crunch topping
5. Bake at 350 for 45 minutes
